A warm wintery classic, pumpkin soup
As Terry and I are always in a constant pursuit of eating what we store in our freezer, last week I was inspired to make one of my favourites, pumpkin soup! We had roasted our own pumpkin in the fall and needless to say we had lots of puree! I think pumpkin muffins will be up next!
Weekly Dinner Menu
Pulled Pork Sandwiches
I advise not doing this the same day you want to eat. We pressure cooked the pork and they turned out ok. But when you slow cook pork, they come out a lot tastier. I love pulled pork served on plain sesame hamburger buns. For an extra treat, top your pork with cheese and don’t forget to butter your buns!
I posted a few years ago our favourite pumpkin soup recipe. We served this with the leftover hamburger buns from the night before. Perfect winter meal!
Sausage and Broccoli Risotto
Risotto as you may have come to learn by now is one of our staple meals. Here are my tips to create this meal.
We didn’t cook! I was really tired from waking up early that morning and not being able to fall back asleep and Terry needed to get to the dentist. So Terry picked up roasted chicken and fries from a great Portuguse place by his work. Oh and some nadas! They are my favourites!
Pizza and Leftover Pumpkin Soup
After our first week back on our regular schedule we decided to keep Friday easy and pop a pizza into the oven. As a side note, we buy the Kirkland all cheese four pack from costco and sometimes dress them up with extra toppings. Really yummy and quick for great pizza when we’re not up for making homemade.
And that concludes last week’s dinner menu plan. If you are looking for other great dinner ideas, you can check my last menu planning post.
