I am so excited to report to all of you our meal plan which featured lots of recipes with colourful veggies! Nearing the end of January and having grey skies nearly everyday, any ounce of colour I can pop into our day is great. Not to mention, I am always trying to think of new ideas to get us to eat more vegetables and I think these meal ideas really scored there too.

Spiced Lentil Soup
I was talking to a friend a few days ago and she was telling me about a super tasty vegetarian chili she had recently made. She had found it on ohsheglows.com which I had totally forgotten about and surfed through to catch-up. I love all the colourful veggie ideas she has! I found this recipe for Spiced Lentil Soup and knew I had to try it! I added cauliflower to mine (bonus veggie) and I have to say I preferred it without the lime juice. I would not recommend using a pressure cooker for this recipe, the soup needs to simmer (sit) for all the flavours to really come together.
Asian Pork Lettuce Wraps
I have used this book so much and talked about it loads, but Real Baby Food is an amazing baby food book. The recipes are always loaded with colourful veggies! I found the asian pork lettuce wraps recipe in here and they are so tasty. However, we all agreed (Ter and I, but I’m sure E would agree) here that we felt hungry still and would have preferred some carbs. So next time I make these, I am going to include the lettuce but also wrap them in a wheat tortilla. I also found this recipe in Real Baby Food (can you tell I’m exploring some new recipes and being resourceful!) and was sold because it’s healthy, quick and I knew it would be tasty. I’ve had Shakshouka before and loved it. You serve it with a splash of olive oil and some fresh bread on the side. I’m honestly tempted to make it again this week! You can use this recipe and just use prepared tomato sauce.
The new Bacon Big Mac came to town so Terry insisted on going to try it and Ethan and I are not ones to refuse their french fries so of course we were game! General consensus, we prefer the original Big Mac.
We ordered take-out from our favourite local place, Sushi Taxi. So yummy.
I’m really happy that we broke out of our comfort zone and tried some new recipes last week. This week’s menu has some new ones as well so stay tuned for next week’s post!
