It has been a huge rush around here leading up to Christmas but we have enjoyed every moment! I find it crazy how busy December is and then once Christmas settles in, it’s like “ok here we are, until next year”. Haha, anyways, we just wanted to take a moment to wish you and yours a very magical and festive holiday season.
We hosted Christmas dinner last night, and it was pretty relaxed experience. Terry and I made the menu about a week or so ago and most of the items we were able to start on the 24th. We also did a lot of sous-vide cooking, so pretty hands-off. The dinner went really well and I’m going to confidently say it was also quite good! In case you’re wondering, we made maple infused carrots, green beans, roast steak, butter and garlic potatoes, a green salad with pomegranate and pears (infused with vanilla) and yorkshire pudding. I love yorkshire pudding!! One of our guests brought dessert, a fantastic homemade chocolate buche. I cannot wait to eat some more later!
And today we are resting. Ethan is napping as I type and Terry is out with a friend watching Star Wars. I am catching up on some magazine reading and watching The Crown. If you haven’t already watched it, I recommend doing so. I have so much new found respect for the Queen.
I’m off for the next week and a half so from work and I’m looking forward to spending lots of downtime with my little family and bringing in the New Year! I have a few projects I want to tackle, including cleaning out our closets (again!). I feel like I’m suffocating when I’m surrounded by too much stuff, so I constantly have the need to get rid of things.
