Mondays and we be like Zzzz… Seriously, I am so tired today, I’m really hoping today is my last day of my cold! It’s making me so groggy and unproductive. However, one remedy that has been helping ail me through this 6 day slump has been soup. All different kinds of hot soup! One of my favourite kinds are Tomato and Leek. A friend of mine made this for me years ago, when she was actually not feeling great and I fell in love with it. It has since been my go-to-soup/quick-meal-fix. Let me introduce you.
Easy Tomato & Leek Soup
- 2 cups chopped leek
- 4-5 small tomatoes, sliced
- 1/4 cup salted butter
- 2 cans of low sodium tomato soup (I like Aylmers)
- Milk (equivalent of two cans of soup)
- Salt and pepper to taste
Melt butter in large pot over medium-high heat
Add in leek and stir until they start to become golden/translucent (see above picture)
Add in tomatoes and sauté until they become mushy
Add in cans of tomato soup and milk (note: you are subbing the water as per directions on can with milk). Stir in milk quickly.
Simmer at medium heat for about 30 minutes.
Serve with parmesan or cheddar on top and side with a hot crusty bread.
